We slow roast Teremana agave under low temperatures for three days in our traditional brick ovens before bringing out the juices for fermentation. Using 100% brick oven roasting allows us to capture the bright citrus flavors of our Teremana highlands agave. Our leftover agave fibers are then turned into organic compost that is used as a natural fertilizer for the agave fields.
