Chicken Taco
Ingredients
- 1 lb boneless/skinless chicken thighs
- 1 tsp Chipotle Pepper
- 1 tbsp Chili Powder
- 1 tbsp Onion Powder
- 1 tbsp Garlic Powder
- 1 tsp Cumin
- 1 tsp Paprika
- Salt & Pepper to taste
In a bowl combine seasoning. Toss chicken with spices until fully coated.
Cook chicken on grill or pan heat medium/high.
Cook chicken 6-7 minutes per side until it is no longer pink on the inside.
Serve chicken on tortilla and add your favorite toppings such as diced red onion, cilantro and queso cotija.
Asada Taco
Ingredients
- 2 lbs of flank steak
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- Salt & pepper to taste
- Cilantro
- Queso Cotija
- Radishes
- Chipotle Aioli
- Guacamole
In a bowl combine seasoning. Toss steak with spices until fully coated.
Preheat the grill to medium/high heat. Grill steak for 6 minutes per side for medium rare.
Place steak on tortilla. Add cilantro, queso cotija, and a few slices of radishes. Top with chipotle aioli. Serve with a side of guacamole.
Veggie Taco
Ingredients (To taste)
- Ripe avocados
- Black Beans
- Corn
- Pico de Gallo
- Radishes
- Queso Cotija
- Mixed Microgreens
Cut ripened avocado and place on tortilla. Add black beans and corn to the pico de gallo and place on top of avocado. Top tacos w/ sliced radishes, queso cotija, and mixed microgreen

Smoked Chipotle Aioli
Ingredients
- 1 cup mayonnaise
- 2 canned chipotle peppers in adobo
- 1 tbsp honey
- Salt & pepper to taste
Finely mince chipotle pepper and mix in with mayo mixture
Creme Fraiche
Ingredients
- 1 pint heavy cream
- 1 tbsp butter milk
